Ingredients

  • 4 cups of fresh broccoli florets
  • 2 cups of chicken broth low sodium
  • 2 cups of cheddar cheese shredded
  • 1 cup of heavy cream
  • 1 medium onion diced
  • 2 cloves of garlic minced
  • 2 tablespoons of unsalted butter
  • 1/2 teaspoon of xanthan gum for thickening
  • Salt and pepper to taste

Instructions

  • Melt the butter in a large pot over medium heat.
