Ingredients

For the Salad:

  • 1 cup of shredded green cabbage
  • 1 cup of shredded red cabbage
  • 2 cups of chopped romaine lettuce
  • 2 cups of chopped kale stems removed
  • 1 cup of thinly sliced cucumber

For the Sundried Tomato & Walnut Dressing:

  • 1/2 cup of sundried tomatoes
  • 1/2 cup of roasted walnuts
  • 1/4 cup of fresh basil leaves
  • 2 cloves of garlic
  • 1 small shallot
  • The juice of 1 lemon
  • 1/2 cup of extra virgin olive oil
  • Salt and pepper to taste

Instructions

  • Prepare the Salad: In a large bowl, combine shredded green and red cabbage, chopped romaine lettuce, chopped kale, and sliced cucumber. Toss until well mixed.
  • Prepare the Dressing: In a blender or food processor, add sundried tomatoes, roasted walnuts, fresh basil leaves, garlic, shallot, lemon juice, and olive oil. Blend until you get a smooth consistency. Season with salt and pepper to taste.
  • Dress the Salad: Drizzle the sundried tomato and walnut dressing over the prepared salad. Toss until the salad is evenly coated with the dressing.
  • Serve: Divide the salad among four plates. Serve immediately for the best taste and texture.
