Ingredients

  • 1 cup of sweet rice flour Mochiko
  • 1/3 cup of granulated sugar
  • 1 cup of water
  • Cornstarch for dusting
  • 1 cup of your favorite vegan filling e.g., sweetened red bean paste, chopped fruits, or vegan chocolate

Instructions

  • In a microwave-safe bowl, combine the sweet rice flour and sugar. Gradually add water, stirring until the mixture is smooth.
  • Cover the bowl with a microwave-safe plate or plastic wrap. Microwave the mixture on high for 2 minutes. Stir the mixture and then microwave again for 2 more minutes.
  • Stir the mixture again. It should have a sticky, gelatinous consistency. If it's not quite there yet, microwave for another minute.
  • Dust a clean surface or baking sheet with cornstarch. Pour the hot mochi mixture onto the dusted surface. Sprinkle more cornstarch on top of the mochi to prevent sticking.
  • Once the mochi is cool enough to handle but still warm, cut it into 12 equal pieces.
  • Flatten each piece into a circular shape. Place a spoonful of your chosen vegan filling in the center of each circle.
  • Gather the edges of the mochi circle and pinch them together to seal the filling inside. Repeat this process with the remaining pieces.
  • Serve your vegan mochi at room temperature for the best texture and enjoy!
