- 4 large tomatoes ripe and firm
- 2 large onions finely chopped
- 2 green chillies chopped
- 2 tablespoons vegetable oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chilli powder
- Salt to taste
- 1 teaspoon sugar
- 2 tablespoons apple cider vinegar
- Fresh coriander leaves chopped, for garnish
Wash the tomatoes thoroughly, chop them into small pieces, and set aside.
Heat the vegetable oil in a pan over medium heat. Once the oil is heated, add the mustard seeds and cumin seeds. Allow them to splutter.
Add the finely chopped onions and chopped green chillies into the pan and sauté until the onions become translucent.
Next, add the chopped tomatoes, salt, turmeric powder, red chilli powder, and sugar into the pan. Stir well.
Cover the pan with a lid and let it simmer on low heat for about 20 minutes, or until the tomatoes become mushy and the oil starts to separate from the mixture.
Stir the chutney occasionally to prevent it from sticking to the bottom of the pan.
