  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 large lettuce leaves for taco shells
  • 1 medium ripe avocado
  • 2 medium tomatoes diced
  • 1/2 medium red onion finely chopped
  • 1 small jalapeno seeds removed and finely chopped
  • 1 tablespoon fresh lime juice

Instructions

  • Place the chicken breasts in a medium-sized pot and add enough water to cover. Bring the water to a boil over medium-high heat. Reduce heat and simmer until the chicken is cooked through, about 20-25 minutes.
