Ingredients

  • 1 lb ground beef 80% lean, 20% fat
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 medium bell pepper diced
  • 2 cups beef broth low sodium
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional garnish: chopped parsley

Instructions

  • Heat the olive oil over medium heat in a large pot.
  • Add the ground beef, seasoning with salt and pepper. Cook until it's browned and no longer pink, usually around 5-7 minutes. Remove the beef from the pot and set it aside.
  • In the same pot, add the diced onion and bell pepper. Cook until the vegetables are tender, about 3-4 minutes.
  • Add the minced garlic to the pot and stir for about 30 seconds until fragrant.
  • Return the cooked ground beef back into the pot, stirring it in with the vegetables.
  • Pour in the beef broth, and sprinkle in the dried oregano. Allow the mixture to simmer for about 10 minutes on low heat. This gives the flavors time to meld together.
  • Stir in the heavy cream and bring the mixture back to a simmer.
  • Gradually add the shredded cheddar cheese, stirring constantly until the cheese is completely melted into the soup.
  • Let the soup cook for an additional 5 minutes on low heat, stirring occasionally.
  • Taste the soup and adjust the salt and pepper as needed.
  • Divide the soup into four servings. Garnish with fresh parsley if desired.
