Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 2 tablespoons flaxseed meal ground flaxseed
  • 1/4 teaspoon sea salt
  • 1 cup unsweetened almond milk
  • 1/2 cup water
  • 2 tablespoons melted coconut oil plus extra for cooking
  • 1/2 teaspoon pure vanilla extract optional, for sweet crepes

Instructions

  • Combine almond flour, coconut flour, flaxseed meal, and sea salt in a large bowl.
  • In a separate bowl, mix together unsweetened almond milk, water, melted coconut oil, and vanilla extract (if making sweet crepes).
  • Slowly pour the liquid mixture into the dry mixture, whisking continuously until you achieve a smooth batter.
  • Let the batter rest for 5 minutes. This allows the flaxseed meal to absorb some of the liquid and thicken the batter slightly.
  • Preheat a non-stick pan over medium heat. Brush it lightly with coconut oil.
  • Pour approximately 1/4 cup of batter into the center of the pan and immediately swirl it around to spread it into a thin layer.
  • Cook the crepe for about 2 minutes, or until the edges start to lift and the bottom is lightly browned.
  • Flip the crepe using a spatula and cook for another minute on the other side.
