Ingredients

  • 1 ripe pear peeled and cored
  • 1 tablespoon lemon juice
  • 1 tablespoon agave syrup or another vegan sweetener
  • 1 bottle of vegan champagne or sparkling wine chilled (ensure it's labeled vegan, as some sparkling wines use animal products in processing)
  • Fresh thyme sprigs for garnish

Instructions

Pear Puree Preparation:

  • Chop the peeled and cored pear into small pieces.
  • In a blender, combine the pear pieces, lemon juice, and agave syrup.
  • Blend until smooth. If the mixture is too thick, add a little water to achieve a pourable consistency.

Assembling the Cocktail:

  • Pour about 2 tablespoons of the pear puree into each champagne flute.
  • Slowly fill the rest of the glass with chilled vegan champagne or sparkling wine. Be careful as it will fizz up when it meets the puree.

Garnishing:

  • Gently stir the cocktail with a cocktail stirrer or a spoon to mix the pear puree and champagne.
