Ingredients

  • 3-4 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 cup beef broth low sodium
  • 1 can 14.5 oz diced tomatoes (no added sugar)
  • 1 tablespoon tomato paste no added sugar
  • 2 teaspoons smoked paprika
  • 1 teaspoon cayenne pepper adjust to taste
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions

  • Preheat your oven to 300°F (150°C).
  • Season the beef chuck roast with salt and pepper.
  • In a large ovenproof pot, heat olive oil over medium-high heat. Add the roast and sear on all sides until browned. Remove and set aside.
  • In the same pot, add onions and garlic, sautéing until softened.
  • Stir in the beef broth, diced tomatoes, tomato paste, smoked paprika, cayenne pepper, and thyme.
  • Return the roast to the pot. Bring to a simmer.
  • Cover and place in the preheated oven. Cook for 3-4 hours or until the meat is tender and falls apart easily.
  • Garnish with fresh parsley before serving.
