Ingredients

  • 2 tbsp. avocado or olive oil
  • 1/2 onion finely chopped
  • 4 cloves garlic minced
  • 1 tsp. smoked paprika
  • 1 tsp. ground cumin
  • 2 cups shredded chicken breast
  • 2/3 cup green enchilada sauce
  • 4 tbsp. freshly chopped cilantro plus more for garnish
  • Kosher salt to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • Sour cream for serving (optional)

Instructions

  • Preheat oven to 375°F (190°C).
  • Line two baking sheets with parchment paper.
  • In a skillet over medium heat, warm avocado oil. Sauté onion until soft (about 3 minutes).
  • Add garlic, smoked paprika, and cumin, cooking until fragrant (1-2 minutes).
  • Introduce chicken and green enchilada sauce. Bring to a simmer.
  • Stir in cilantro, season with salt, and remove from heat.

Making Taquito Shells:

  • In a bowl, combine cheddar and mozzarella cheeses.
  • Form twelve 3 ½" cheese piles on the baking sheets.
  • Bake until cheese is melty and slightly golden (about 10 minutes).
  • Cool for 2-4 minutes, then gently peel shells off parchment.

Assembly:

  • Place a small amount of chicken mixture on each shell.
  • Roll tightly to form taquitos.
  • Repeat until all ingredients are used.

Serving:

  • Garnish with additional cilantro.
  • Serve with sour cream for dipping, if desired.
